- In 2013, Mary Beth became a volunteer Court Appointed Special Advocate (CASA) for children in foster care.

- In 2005, Mary Beth became an entrepreneur when she started Mary Beth's Apple Pie Company using her modified version of an old family recipe. The company went on to sell more than 3,000 pies on QVC, as well as mini pie versions on WilliamsSonoma.com.
- Agreed to play the recurring role of "Paige Miller" on One Life to Live (1968), but decided against it at the last moment when she was offered a contract with As the World Turns (1956). The role of "Paige Miller" then went to Kimberlin Brown.
- After blogging for several years on HybridMom.com, Mary Beth launched her own lifestyle blog, Plank, in January 2015.
- At 14 she got a job in a fast-food restaurant and had her older sister drive her to acting classes.
- The youngest of four children, Mary Beth has one older brother and two older sisters.
- Following graduation from Huntington Beach High School, Evans spent five months in Europe before joining the prestigious South Coast Repertory Conservatory.
- Evans was voted Best Actress by her 4th-grade classmates in Orange County, California. From there the self-described "beach girl" set her sights on a performing career.
