Chargrilled mackerel, salads, squid: favourite seasonal recipes from the finest chefs

Giorgio Locatelli's chargrilled mackerel with herb crust
Mackerel is a fantastic but underrated fish, which is brilliant cooked inside a crispy herb crust that protects the fish, keeping it moist and trapping in all the delicate flavours. You can do this with mackerel fillets, too, in the same way, but leave out the stuffing and cook the fillets, skin side first, for 2-3 minutes, depending on the thickness, then turn over for a further 2-3 minutes.
Serves 4
tomatoes 4, diced
olive oil 100ml
white onions 4, cut into about 2cm dice
white wine vinegar 3 tbsp
salted capers (preferably baby ones) 4 tbsp, rinsed
medium-sized mackerel 4, gutted
rosemary 4 sprigs
garlic 4 cloves
mixed salad leaves 4 handfuls

It’s been a little over a year since San Francisco resident Yigit Pura won the first season of Bravo reality competition series, Top Chef: Just Desserts and was also voted fan favorite by the viewers. Since that television exposure Pura has been wearing many hats. While holding down his day job as Executive Pastry Chef with Taste Catering & Event Planning, he also signed on as a Bravo website blogger when the second season of Just Desserts aired in late summer. Plus, he appeared regularly at Lgbt-related benefits and fundraisers, and he's starred in a series of Cooking Channel videos with fellow gay pastry chef Zac Young.
Now, thankfully for us, he is shedding his shirt and being doused in rainbow sprinkles for a 2012 calendar benefiting Meals On Wheels.

Rarely have I seen a show that seemed to have so much potential on paper, while at the same time managing to convince me that so little of that potential will ultimately be realized. The outline of Running Wilde may not exactly jump out at me – the wacky love-interest angle between the rich, spoiled son of an oil tycoon, and the (let’s face it) laughably liberal girl who got away when the two were kids – but the people involved in the show offer up bags of potential television goodness, and moreover bring to mind just the sort of potential that is ripe for the market right now.

I'm within a month of being done with my first year of Grad school, which means that the next few weeks are a veritable flurry of tests, projects, academic advising meetings and the like. And that's just to do with school, never mind the other mess with regards to what I'm going to do for the summer, where I'm going to be living next year, and just what the hell am I going to do with myself a year from now after I've actually earned this degree so I will not be getting a good night's sleep until probably May 13th at the earliest. According to certain people I get more amusing the more sleep deprived I get so maybe all of y'all have something to look forward to. Welcome to Tuesday night:

Howdy, PopWatchers. To compensate for depriving us of Hell's Kitchen last week, Fox kindly aired two back-to-back episodes last night. However, in all honesty, the episodes were so similar that they have merged to form one massive Hk blob in my mind. This isn't to say that last night didn't feature a number of developments, including the first instance of Chef Ramsay walking out of the restaurant altogether. Plus, the episodes did have a reoccurring theme: The downfall of Van. We'll get to Mr. Sweaty Tamale soon, but first things first... Episode 10 Suzanne joined the blue team, and Kevin, Dave, and Van weren't too thrilled about it. As the three guys lectured Suzanne on what they expected from her, we got a glimpse of an orange ashtray, and holy mother of nicotine, that ashtray was being used. Suzanne, Dave, and Van were all smoking cigarettes, but that still doesn't explain...
