Fritzi (the dog) has a choke chain collar when LeBeau speaks to him in the dog pen just after Schnitzer delivers him. When Fritzi is taken down into the tunnel, he has a leather collar containing the message.
Update: When Schnitzer delivers Fritzi to the pen, Fritzi has the leather collar containing the message around his neck. The dog shown while LeBeau is talking to 'Fritzi' is not the one Schnitzer called Fritzi when the dog was delivered. There may have been some confusion during filming as to which dog was Fritzi, as the two have very similar markings.

Just after the mini-credits, Hogan is grilling Schultz about the six officers that came into camp. After he denies any knowledge of what they are there for, the gang starts distributing chocolate bars from a Red Cross package. When Schultz reaches for one (over Hogan's shoulder), Hogan hands a chocolate bar from his right hand to LeBeau, and holds another away from Schultz in his left hand. There is a cut to a close-up of Schultz and Hogan (with Carter in front), but the chocolate bar is now in Hogan's right hand.
When Colonel Klink is addressing the men who arrived in the truck, you can hear crickets chirping even though it is Winter season and there is snow on the ground.
The small truck that is used has the steering wheel on the right; German trucks have the steering wheel on the left. The larger truck that was used has the steering wheel on the left.
While LeBeau installs a hidden microphone in an overhead lamp, Carter acts as a lookout for Schultz. However, when Carter watches for Schultz, he does so by pretending to look through a closed door.
Update: This may not be a goof. When Carter closes the door, it is quite noticeable that the three planks that make up the door are not tightly fitted together, creating gaps that are easy to see through. Carter is looking through one of those gaps.

John Doucette's character is called Colonel Leeman throughout the show, but in the credits, he is listed as Major Leeman. This, however, may have been done to indicate an off-screen demotion.
When Schnitzer delivers the dogs, they all have choke collars - except Fritzi. This difference would be pretty obvious to the Germans, and might cause an investigation before the message could be retrieved. In that event, their whole operation could be jeopardized.
During the party, Hogan equates the brandy he is drinking to 'machine oil'. He then tells Colonel Leman that he better check and see what they're putting in his carburetor. As a pilot and with his knowledge, Hogan would know that oil is not used in a carburetor. Instead, he might have told Colonel Leman to check what they're putting on his squeaky wheels.
