- Richie runs the front of the house while Sydney runs the kitchen. During service, issues begin to add up. The restaurant runs out of forks, Carmy and Marcus are forced to assist when chef Josh goes missing and the fridge handle breaks.
- Syd is directing the kitchen staff through the opening dishes, in her new chefs jacket, announcing orders and directing the dishes to the right places. Sugar walks around the dining room, sitting down with Pete and noticing imperfections and informing Richie through a note. Richie checks on all of the guests, saying hello to Uncle Jimmy and a few other familiar faces, eventually stopping at Claire to talk with her and her guest. He moves on to Emmanuel, Syd's dad, and Fak offers him and his guest a drink. We see the kitchen staff meticulously moving around the kitchen, and Sweeps takes a note to Sugar informing her of their shortage of forks. Sugar asks Pete the odds of her mom showing, and he tells her she has a 25% chance she shows. She goes to the kitchen, finding Carmy and telling him about the fork shortage.
Marcus angrily confronts Syd as she has been avoiding him since service started, and he stalks off after he gets her attention. Sugar joins Pete again at their table where she gets up again a moment later to handle another issue. Carmy walks out to serve a dish going to Claire's table, and Syd questions if now is the time for that. Fak goes to handle a toilet being clogged and we see Sugar trying to unclog it. She gets wet and asks Carmy for a change of clothes as he leaves Claire's table.
Syd argues with Tina over whether a dish needs to be redone, and Carmy loses his grip for a second over the same issue. Syd tells him to calm down and talks him through his anger, and they eventually rub their chests to signify they are sorry. Marcus breaks the handle off the walk-in fridge while Carmy is in it, locking him in. Sydney calls for a pause of their work for a moment while she tries to figure out what to do. Richie steps in for her as she starts to panic, and Syd and Richie set him up to call orders to their team as he had seen done at the restaurant he shadowed at previously. He steps up and directs the kitchen with ease.
Carmy paces in the walk-in, having vivid flash backs to the restaurants original state and his mess ups leading up to this moment. Sugar throws an apron on and starts helping as well, and Carmy continually takes his frustration out on the walk-in door as he is desperate to get out and oversee his kitchen. Sweeps comes in with forks and dumps them into the dish pit to be cleaned. Richie meets and exceeds expectations on his timing and directing of the kitchen, continuously encouraging the staff to keep working hard.
In the dining room, we see Carmy's old chef he trained under sitting at a table, observing the restaurant as he waits to be served, seemingly a figment of Carmy's imagination. Fak and Pete greet each other, and Pete sees DeeDee, his mother in law, smoking a cigarette outside and encourages her to come in to see her kids and their success. She tells him she doesn't think she can take it, telling Pete not to tell them she was here, that she doesn't know how to apologize and that she doesn't deserve to see the success. She finds out Sugar is pregnant, but that still doesn't implore her to come in. Pete relents and tells a pleading Donna that it's okay that she doesn't go in. He watches her walk away, seemingly stunned by what just happened.
Richie continues to run the kitchen, and they meet their deadline of 5 minutes. Carmy is still locked in the walk-in fridge, finally calming down and accepts that he can't get out. Marcus finds Josh outside smoking meth, firing him but explaining he needs to check with Sydney first. Pete and Sugar talk and he cries, imploring her to forget her mother for not coming and to forgive her on this one without telling her that she showed up. Marcus approaches Syd and acknowledges the weirdness between them, and tells her he found Josh smoking crack in the alley and that he fired him, and she affirms that was the right decision. Sweeps presents Uncle Jimmy with a chocolate banana as a surprise from Richie, and Jimmy asks him to thank him on his behalf.
Carmy vents to Tina through the door, expressing his feelings of failure. Tina comforts him as Claire finds out he's trapped in the walk-in. She goes to check on him and Syd walks out of the kitchen to throw up as she walks in. Carmy is still venting to Tina, but Claire ends up overhearing his rant pertaining to his life before she came into it and his feelings of not being deserving of joy. She speaks to him through the door and he realizes what he's just done. He calls for her and she walks away with tears in her eyes. Richie stops her and she thanks and congratulates him. Richie confronts Carmy over what he just said to her, but they get into a heated argument through the walk-in door. They throw words back and forth, getting increasingly angry and throwing verbal jabs before Richie walks away. Carmy is still alone in the walk-in, now with no one on the other side.
He sits in his emotions over what just happened with Richie before pulling out his phone to listen to the voicemail from Claire she left in the last episode. She tells him how special and wonderful he is, stating that she's proud of him and his brother would feel the same if he were still here. She tells Carmy she loves him and he drops his phone and has to take deep breaths to calm himself.
Marcus gets a package with a note from Luca, making him smile. Sweeps and Fak enjoy a bite to eat outside. Ebraheim oversees a man cutting the fridge to free Carmy. Syd finishes throwing up and her father rushes to her aid, where she asks him about the food and he tells her it was incredible. Richie enjoys a cigarette. Marcus reveals the package from Luca to be the iconic sign, "Every Second Counts", which he places under the clock, and we see his phone lighting up with multiple missed messages and calls from his mother's nurse. Syd continues to be sick outside and hugs her father goodbye. Carmy, still sitting in the walk-in, finally sees the sparks of the welding tool that is cutting him out of the fridge. Sydney smiles to herself and takes a reassuring breath before the scene cuts to black.
